1- PREPARING THE MACHINE FOR USE
Secure the machine to the table with the clamp and place the turning handle in its socket. Before first use, the machine should be wiped with a dry cloth. To clean the dough roller, pass a piece of dough through it several times and discard that dough.
2 - PREPARING THE MIXTUREThe basic ingredients for a single serving of pasta are approximately 125 grams of wheat flour and one egg. Note: For the best taste, it is not recommended to use freshly taken out eggs from the refrigerator! For four servings, you can use approximately 500 grams of wheat flour and 4 eggs. You can use water instead of eggs if desired. (1 egg = approximately 80 ml of water)
Add the eggs to the center of the flour and mix thoroughly with a fork until fully combined with the flour. Knead the dough by hand until it forms a homogeneous mixture. If the mixture is too dry, add a little water; if it is too moist or soft, add a little flour. A good mixture should not stick to your fingers. Take the mixture from the bowl and place it on a lightly floured table. If necessary, divide it into small pieces with a knife.
3 - MAKING DOUGH AND PASTAYour machine has a dough thickness adjustment knob. Pull the adjustment knob of your machine outwards and turn it to position “1”. In this way, two flat rollers will be fully open. Pass a piece of the mixture through the machine by turning the handle. Repeat this process 5-6 times, you can fold the dough and pass it through or add some flour to the middle parts if necessary.
When the dough takes a smooth shape, pass the dough once between the rollers at setting “2”, then in the same way at setting “3”. Continue until you reach the desired thickness. Place the dough on the table that you have lightly floured and cut it into pieces of 25 cm in length. To use the cutting rollers, place the handle in its socket, turn it slowly, and pass the dough through to obtain the desired shape of pasta.
Note 1: If the rollers are not cutting, the dough may be too soft. In such a case, add a little more flour to the mixture and pass the dough through the flat rollers again.
Note 2: Similarly, if the dough is too dry, it may cause the rollers not to cut. Add a little water to the mixture and pass it through the flat rollers again.
