USAGE AND MAINTENANCE INFORMATION

PREPARING THE MACHINE FOR USE

Secure the machine to the table using the special clamp and place the crank into the hole of the rollers. When using the machine for the first time, it is necessary to clean it with a dry cloth to remove excess oil. For cleaning the rollers, pass a small piece of dough through them, which should be discarded later.

PREPARATION OF THE MIXTURE

Measurement for 6 people.

Ingredients: 500 gr soft wheat flour and 5 eggs; you can replace 5 eggs with 1 cup of water. For a tasty pasta, mix 250 gr soft wheat flour with 250 gr hard wheat flour. Do not add salt! Place the flour in a bowl and make a well in the center. Crack the eggs into the well and mix them with a fork until fully incorporated into the flour. Knead the mixture by hand until it becomes completely homogeneous and reaches the right consistency. If the dough is too tough, add water; if it is too soft, add flour. The dough should never stick to your fingers. Remove the dough from the bowl and place it on a lightly floured surface. If necessary, continue kneading with your hands and cut it into small pieces. A tip: do not use eggs that have just been taken out of the refrigerator!

PREPARING DOUGH AND PASTA WITH "AMPIA"

Pull the regulator outward and set the machine to number 1, with both rollers completely open (about 3 mm). Turn the handle and pass a piece of dough through the rollers.

Double the dough and, if necessary, add some flour to the center. Repeat this operation 5-6 times. When the dough has formed a regular shape, set the regulator to number 2 and pass the dough through the rollers only once. Then, pass the dough through the rollers again at setting 3 until the desired thickness is achieved (min. thickness – 0.2 mm n..9). Cut the dough with a knife into approximately 25 cm long pieces (=10”). Place the handle in the cutting roller's hole and turn it to pass the dough through and get the desired type of pasta.

If desired, pass the dough through the front gear to make thin pasta (1.5 mm TAGLIERINI) or through the middle gear to make thick pasta (6.5 mm FETTUCCINE).

Note 1 – If the rollers ‘cannot cut’ or do not separate the dough properly, it means the dough is too soft. In this case, we recommend adding flour to the mixture and passing the dough through the smooth rollers.

Note 2 – Be careful not to make the dough too hard, otherwise the rollers will not be able to process it.

Boil plenty of salted water (approximately 4 liters for 1/2 kg of pasta). Fresh pasta cooks quickly, depending on thickness, in 2 to 5 minutes. Stir carefully and after cooking, pass the pasta through a colander.

MAINTENANCE OF THE MACHINE

1- During use, occasionally clean the scrapers beneath the smooth rollers with a piece of kitchen paper.

2- Never wash the machine with water or in the dishwasher!

3- To clean the machine after use, use a brush and a wooden stick.

4- If necessary, place a few drops of Vaseline oil on the ends of the cutting rollers.

5- Do not pass knives or kitchen towels through the rollers.

6- After use, store the machine and its accessories in their respective boxes.
