PREPARING THE MACHINE FOR USE
Secure the machine to the table using the special clamp and insert the handle into the roller hole. Before the first use, clean with a dry cloth to remove excess oil. To clean the rollers, pass a small amount of dough through them and discard it afterward.
PREPARING THE DOUGH
Portion for 6 people.
Ingredients: 500 g soft wheat flour and 5 eggs; alternatively, you can use 1 cup of water instead of 5 eggs. For a delicious pasta, mix 250 g of soft wheat flour with 250 g of durum wheat flour. Do not add salt! Pour the flour into a bowl and break the eggs into the center. Mix the eggs with a fork until fully combined with the flour. Knead the dough by hand until it becomes smooth and homogeneous. If the dough is too firm, add water; if too soft, add flour. Properly kneaded dough should not stick to your fingers. Transfer the dough to a lightly floured surface and, if necessary, continue kneading by hand before cutting it into small pieces. Tip: Do not use eggs straight from the refrigerator!
PREPARING DOUGH AND PASTA WITH THE “ATLAS”
Pull the regulator outward and set it to position 1, ensuring the two smooth rollers are fully open (about 3 mm). Pass a piece of dough between the rollers by turning the handle.
Fold the dough in half and, if necessary, sprinkle some flour in the middle. Repeat this process 5-6 times until the dough achieves a uniform shape. Once the dough is smooth, set the regulator to position 2 and pass it through the rollers only once. Continue adjusting through position 3 until the desired thickness is achieved (minimum thickness – 0.2 mm, max 9). Cut the dough into approximately 25 cm lengths using a knife. Insert the handle into the cutting rollers and turn it while feeding the dough through to achieve the desired pasta type.
You can make thin pasta (1.5 mm taglierini) using the fine cutter or thick pasta (6.5 mm fettuccine) using the wide cutter.
Boil plenty of salted water to cook the pasta (approximately 4 liters per 500 g of pasta). Fresh pasta cooks quickly, usually between 2 to 5 minutes depending on thickness. Stir carefully and drain after cooking.
