PREPARING THE MACHINE FOR USE

Secure the machine to the table using the special clamp and insert the handle into the hole of the rollers. When the machine is to be used for the first time, it is necessary to clean it with a dry cloth to remove excess oil. Pass a small amount of dough through their gaps for the cleaning of the rollers later.

PREPARING THE DOUGH

Measure for 6 people.

Ingredients: 500g soft wheat flour and 5 eggs; you can use 1 cup of water instead of 5 eggs. For delicious pasta, mix 250g soft wheat flour with 250g hard wheat flour. Do not add salt! Put the flour in a bowl and pour the eggs into the middle. Mix the eggs with a fork and ensure they are completely mixed with the flour. Knead the resulting dough with your hands until it becomes completely homogeneous and smooth. If the dough is too hard, add water; if it is too soft, add flour. A dough at the right consistency should never stick to your fingers. Place the dough on a lightly floured surface. If necessary, continue kneading the dough with your hands and cut it into small pieces. A tip; do not use eggs that have just been taken out of the refrigerator!

PREPARING THE DOUGH AND PASTA PRODUCED WITH “ATLAS”

Pull the machine's regulator outwards and bring two flat rollers completely open (approximately 3 mm) to number 1. Turn the handle to pass a piece of dough between the rollers.

Double the dough and, if necessary, add flour to the middle, repeat this operation 5-6 times until the dough takes a regular shape. When the dough takes a regular shape, set the regulator to number 2 and pass it between the rollers only once. Then pass it three times until you reach the desired thickness. (min. thickness - 0.2 mm n..9) Place the dough on the cutting rollers' pins and turn it to obtain the desired type of pasta.

  • If desired, pass through the front rollers to get thin pasta (1.5 mm TAGLIERINI) or pass through the middle rollers to get thick pasta (6.5 mm FETTUCCINE).
  • If the rollers 'cannot cut' or do not separate the dough well, it means the dough is too soft. In this case, we recommend adding flour and passing the dough through the flat rollers.
  • Make sure the dough is not too hard, otherwise the rollers will not be able to take the dough.

Boil a large amount of salted water where you will pour the pasta. (Approximately 4 liters for 1/2 kg of pasta) Fresh pasta cooks quickly, from 2 to 5 minutes depending on the thickness. Stir carefully and drain after cooking.

MAINTENANCE OF THE MACHINE

  • During use, occasionally clean the scrapers under the flat rollers with a piece of kitchen paper.
  • Do not wash the machine with water or in the dishwasher!
  • After use, clean the machine with a brush and a wooden stick.
  • If necessary, put a few drops of petroleum jelly at the ends of the cutting rollers.
  • Do not pass a knife or kitchen towels between the rollers.
  • After use, store the machine and accessories in their own boxes.
