USAGE AND MAINTENANCE INFORMATION

PREPARING THE MACHINE FOR USE

Secure the machine to the table using the special clamp and insert the crank handle into the hole of the rollers. Before first use, clean the machine with a dry cloth to remove any excess oil. To clean the rollers, pass a small amount of dough through them and discard it afterward.


PREPARING THE DOUGH

Measurement for 6 people:

Ingredients:

  • 500 g soft wheat flour
  • 5 eggs (Alternatively, you can use 1 cup of water instead of eggs)

For delicious pasta, mix 250 g soft wheat flour with 250 g hard wheat flour. Do not add salt!

Place the flour in a bowl and pour the eggs into the center. Use a fork to mix the eggs and gradually incorporate the flour. Knead the dough by hand until it becomes smooth and uniform. If the dough is too hard, add water; if it is too soft, add more flour. Properly prepared dough should not stick to your fingers.

Transfer the dough onto a lightly floured surface. If necessary, continue kneading by hand and cut it into small pieces.
Tip: Avoid using eggs directly from the refrigerator!


PREPARING THE DOUGH AND PASTA WITH "ATLAS"

Pull the regulator outward and set it to position 1 (fully open rollers, approximately 3 mm). Pass a piece of dough through the rollers by turning the handle.

Fold the dough in half, dust with flour if necessary, and repeat this process 5-6 times until the dough becomes uniform. Once smooth, adjust the regulator to position 2, and pass the dough through once. Continue this process step by step, reducing the thickness until the desired level is achieved (minimum thickness 0.2 mm, position 9).

Cut the dough into 25 cm (10”) lengths using a knife. Insert the handle into the cutting rollers and turn it while passing the dough through to obtain the desired type of pasta.

  • For fine pasta (1.5 mm - TAGLIERINI), use the fine cutter.
  • For wide pasta (6.5 mm - FETTUCCINE), use the medium cutter.

If the rollers are not cutting properly or the dough is not separating well, it may be too soft. In this case, add more flour and pass it through the smooth rollers again.
Ensure the dough is not too hard, as the rollers may not be able to pull it in.


COOKING THE PASTA

Boil a large amount of salted water (about 4 liters per ½ kg of pasta). Fresh pasta cooks quickly, depending on thickness, within 2 to 5 minutes. Stir carefully while cooking and drain immediately when done.


MACHINE MAINTENANCE

  • During use, clean the scrapers under the smooth rollers occasionally with a paper towel.
  • Never wash the machine with water or in a dishwasher!
  • After use, clean the machine with a brush and a wooden stick.
  • If necessary, apply a few drops of petroleum jelly to the ends of the cutting rollers.
  • Do not insert knives or cloths between the rollers.
  • Store the machine and accessories in their original packaging after use.
