Atlas 180 Pasta Machine allows you to easily prepare pasta or noodles for your family in a very short time with the hand crank or the electric motor you can purchase additionally.

During the production of Atlas 180 Pasta Machine, it has been tested and approved not to introduce any foreign or harmful substances into your food.

PREPARATION FOR USING THE MACHINE;

Secure the machine to the table using the special clamp and place the handle in the hole of the rollers. When the machine is to be used for the first time, it is necessary to clean it with a dry cloth to remove excess oil. Pass a small amount of dough through their gaps for the cleaning of the rollers later.

PREPARATION OF THE MIXTURE;

Measurement for 6 people.

Ingredients: 500 gr soft wheat flour and 5 eggs; you can use 1 cup of water instead of 5 eggs. For a delicious pasta, mix 250 gr soft wheat flour with 250 gr hard wheat flour. Do not add salt! Put the flour in a bowl and pour the eggs into the middle. Mix the eggs with a fork and ensure they are completely mixed with the flour. Knead the resulting dough with your hands until it becomes completely homogeneous and smooth. If the dough is too hard, add water; if it is too soft, add flour. A dough at the right consistency should never stick to your fingers. Place the dough on a lightly floured surface. If necessary, continue kneading the dough with your hands and cut it into small pieces. A tip; do not use eggs that have just been taken out of the refrigerator!

PREPARATION OF DOUGH AND PASTA PRODUCED WITH “ATLAS”;

Pull the machine's regulator outwards and bring the two flat rollers to a fully open position (approximately 3 mm) on number 1. Turn the handle to pass a piece of dough between the rollers.

Double the dough and, if necessary, add flour to the middle, repeat this operation 5-6 times until the dough takes a regular shape. When the dough takes a regular shape, set the regulator to number 2 and pass it between the rollers only once. Then pass it three times until you reach the desired thickness. (min. thickness - 0.2 mm n..9) Place the dough in the hole of the cutting rollers and turn it to get the desired type of pasta.

If desired, pass it through the front rollers for thin pasta (1.5 mm TAGLIERINI) or through the middle rollers for thick pasta (6.5 mm FETTUCCINE).

Note1 – If the rollers 'cannot cut' or do not separate the dough nicely, the dough is too soft. In this case, we recommend adding flour and passing the dough through the flat rollers.

Note2 - Be careful not to make the dough too hard, otherwise the rollers will not be able to take the dough.

Boil a large amount of salted water in which you will pour the pasta. (Approximately 4 liters for 1/2 kg of pasta) Fresh pasta cooks quickly, from 2 minutes to 5 minutes depending on the thickness. Stir carefully and drain after cooking.

MAINTENANCE OF THE MACHINE;

1-During use, occasionally clean the scrapers under the flat rollers with a piece of kitchen paper.

2-Never wash the machine with water or in the dishwasher!

3-After use, clean the machine with a brush and a wooden stick.

4-If necessary, put a few drops of petroleum jelly at the ends of the cutting rollers.

5-Do not pass a knife or kitchen towels between the rollers.

6-After use, store the machine and accessories in their own boxes.
