The lever system of the professional coffee machine allows the barista to manually adjust the pre-infusion time for each source: when the lever is lowered, the hot water from the boiler enters the group and moistens the coffee cake. The lower the barista holds the lever, the longer the pre-infusion stage will be. A skilled barista waits for the first coffee drops to come out of the mouth and then raises the lever; this means that all the coffee cake is soaked.
